Ingredients:
- 500g of chicken thighs
- 100g of all-purpose flour
- 50g of corn starch
- 2 eggs
- 200ml of buttermilk
- 1 tsp of paprika
- 1 tsp of garlic powder
- 1 tsp of onion powder
- 1/2 tsp of cayenne pepper
- Salt to taste
- Pepper to taste
- Oil for frying

Instructions:
- Marinate the chicken thighs in buttermilk, salt, and pepper for at least 15 minutes to tenderize and flavor.
- In a mixing bowl, combine flour, corn starch, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper to create the coating mixture.
- In another bowl, whisk the eggs until well beaten.
- Remove the chicken from the marinade and allow excess buttermilk to drip off.
- Dip each chicken thigh first into the egg wash and then coat evenly with the flour mixture, pressing it onto the chicken to ensure it sticks well.
- Heat oil in a deep fryer to 180°C (356°F).
- Carefully place the coated chicken thighs into the hot oil and fry for about 6-8 minutes or until they are golden brown and cooked through, checking with a meat thermometer to ensure they reach an internal temperature of 75°C (165°F).
- Once cooked, remove the chicken from the oil and place it on paper towels to drain excess oil.
